.gitlab-ci.yml: Increase the build timeout

The job takes longer than an hour on gitlab.com, so let's set the
timeout to two hours, to be sure that there's enough time.

On other GitLab-CI runners, it will be faster, but it's good to be able
to run the tests on gitlab.com too.
